Why can honey turn cloudy, grainy or solid?

Honey can turn cloudy, grainy or firm as its sugars form crystals. The timing depends on its composition and storage conditions. Any variety, including Beri (Sidr), may crystallize; staying liquid is not guaranteed.

Crystallization on its own does not mean honey has spoiled, and it is not a test of purity. A liquid jar is not automatically impure either.

Keep the jar tightly closed in a dry place, away from direct sunlight. For a softer texture, put a heat-safe glass jar in warm, not boiling, water. Keep the water below the lid and out of the honey. If your honey comes in plastic, transfer a portion to a heat-safe glass jar first. Avoid direct or repeated heating. The honey may crystallize again.

You may know these honeys as Phalai or Palosa, Beri (Sidr). Read the individual listing for the variety supplied and ask us if you need help choosing.

Learn the local names and the difference between floral honey and honey with added ingredients. These general descriptions do not confirm the source of any particular jar. Colour and aroma can vary between harvests.

  • Garanda honey

Associated with the white flowers of the mountain plant locally called Garanda in Potohar and Azad Kashmir. Commonly described as light golden.

  • Phalai or Palosa honey

Phalai and Palosa are regional names associated with Acacia modesta: Phalai in Punjab and Palosa in Khyber Pakhtunkhwa. A generic Acacia label alone does not establish this floral source.

  • Malta / citrus honey

Associated with orange and kinnow blossom, including the citrus orchards of Sargodha, Sahiwal and Pattoki.

  • Lychee honey

Named for lychee blossom and described as golden with a reddish tint. Colour alone cannot confirm the floral source.

  • Shaftal honey

Associated with the pink and white flowers of the fodder plant locally called Shaftal, including irrigated areas around Sahiwal, Okara and Pattoki.

  • Robinia honey

Associated with white Robinia blossom and often described as pale honey. Robinia and Phalai are different floral identities; this name does not guarantee that honey will never crystallize.

  • Ajwain honey

Associated with Ajwain’s umbrella-shaped white flowers and described as dark brown. Floral Ajwain honey is different from honey with Ajwain seeds, oil or extract added.

  • Beri (Sidr) honey

Associated with Beri blossom and often described as deep amber. The name refers to a stated floral source, rather than a guarantee of quality or a permanently liquid texture.

  • Sperkay honey

A regional name associated with a mountain wild plant described as having white and purple flowers in Waziristan, Karak and Bannu. Confirm the botanical identity and harvest origin with the supplier.

  • Kalonji honey

Associated with the pale blue and white flowers of Kalonji. Honey collected from the flowers is different from honey mixed with Kalonji seeds or oil; check the ingredients.

  • Saffron-infused honey

This preparation combines honey with added saffron, sometimes using Beri or Phalai honey as its base. It is an infusion, rather than a separate floral honey. Check the ingredient list for the actual recipe.

  • Ginger-infused honey

This preparation combines honey with ginger or dried ginger (sonth). It should be described by its added ingredients, rather than as honey collected from ginger flowers.

This is an educational guide, not a stock list. Check the product listing for availability, ingredients and batch origin. Traditional health claims are not established treatment benefits and are not included here.

Sidr (Beri) honey: uses and research

Try Beri honey with warm paratha, toast or plain yoghurt. Taste a small amount first, then use the current batch’s tasting notes to find the pairing you enjoy.

Do not give honey to babies under 12 months, including in their food or drinks.

About this variety

Beri, also sold as Sidr, refers to the stated floral source. It does not identify the bee species or guarantee that the honey will stay liquid.

Research and sources

A 2014 Pakistani study tested honey described as Siddar/Ziziphus alongside other samples. It measured composition and activity against microbes in the laboratory, not treatment outcomes in people. It did not test our batch.

A 2025 study measured minerals, plant compounds and antioxidant activity in 15 honey samples from Pakistan. Results varied between samples. These laboratory findings do not show what happens when people eat the honey.

The researchers did not test our jars. The study is background reading, not proof of a health benefit from a particular variety. Honey still counts towards your free-sugar intake, so keep portions in mind.
